Aristocratic recipe version of such a peasant, simple and very nutritious vegetable. It deserves to be served at festive table along with roasted goose, duck or pork and it’s good as it is.
Ingredients
- 1 kg red cabbage (without the core)
- 2 tablespoons vegetable oil
- 3 tablespoons water
- 5 oranges
- 10 juniper berries
- 1/2 tbsp sugar (if the oranges are very sour, then the whole tablespoon)
- Salt and pepper to taste
1) Slice the cabbage into strips (a little thicker than for sauercraut). Squeeze orange juice.
2) Heat up a deep, large skillet, over medium heat and add the oil. Add shredded cabbage and cover. Stir and add 3 tablespoons water and juniper berries after 2 minutes of braising, and then cover with a lid again.
3) Braise stirring every 5-8 minutes until the cabbage is completely soft. (Approximately 20-25 minutes)
4) Take off the lid. Add orange juice, salt, pepper and sugar. Stir well and braise for another 10 minutes with a lid off. Take off the heat, transfer into a serving dish and serve!
