Grilled mackerel with herbs and lemon

A friend of mine once confessed that she has never ate mackerel, other than smoked. Then followed the question: "Can You fry, bake and steam it?" Yes of course you can! This is a valuable fatty fish perfectly shows itself as well fried and roasted. And my favorite way to have it is grilled.
Tender nutritious flesh, minimum bones and bright taste ... that is the way to describe this dish!
Ingredients
- 2 middle sized mackerels, fresh or thawed
- 2 lemons, washed well
- 2 tbsp olive oil
- 2 springs thyme, wash
- 2 springs rosemary, wash
- Salt and pepper to taste
1) Gut the mackerel and rinse well under cold running water. Drain and make several deep incisions widthwise on each side of the fish.
2) Cut the lemons in half. Squeeze the juice of ½ lemon and cut another ½ lemon in semi circles. Set aside 2 other halves until grilling.
3) Sprinkle the fish the squeezed juice of ½ lemon and olive oil, season with salt and pepper. Place a spring of thyme and rosemary in the cavity of each fish. Distributed the lemon slices in the abdominal cavity. Set aside the seasoned fish for 30 minutes to infuse.
4) Heat up Your grill till the coal is burnt out and only the residual heat is left. Lay out the fish on the grill. Roast for 7-8 minutes on each side. Fish should be white inside.
5) 5 minutes before the end the fish place lemon halves on grill, cut side down. This makes the lemon juice somewhat mellow and brings out some sweetness and flavor of smoke.
6) Remove the fish from grill and serve immediately, sprinkling with juice of grilled lemon over the fish!
