Zucchini rolls with smoked salmon

Have you ever tasted raw zucchini? If You have not done it yet, then you do not even know what is the true taste of zucchini. Combining with those ingredients it tastes awesome.
The most important while making this treat is to be careful but confident. Otherwise, zucchini breaks, rolls unroll and all goes wrong... But if You know what You are doing all goes just right!
Ingredients
- 2 zucchini, wash properly
- 200 g cream cheese (Almette, Philadelphia)
- 80 g smoked salmon
- 3 tbsp olive oil
- Salt and pepper to taste
- 1 spring dill for decoration
1) Cut zucchini into thin wide strips lengthwise. The easiest way to do it is using a vegetable peeler. Warning: it is not so easy to do! The strips should be thin enough to curl up and not too thin, not to break.
2) Sprinkle or brush evenly a large plate with olive oil, sprinkle with salt and pepper.
Lay out strips of zucchini on top, press down and flip on the other side. This is the easiest way to season delicate and fragile strip of zucchini evenly.
3) Cut the salmon in small bricks, not longer than the width of the strips of zucchini and with diameter not wider than 1 cm.
4) Brush each strip of zucchini with a thin layer of cream cheese, leaving 1 cm free on top and bottom and about 0.5 cm on each side. Put a piece of salmon on cream cheese in upper part and start to wrap the rolls carefully.
Lay each roll horizontally seam side down to fix the shape. Do the same with each strip.
5) Turn the rolls vertically to serve and garnish with a branch of dill and serve immediately!
Note: This appetizer cannot be prepared several hours ahead. Make it and serve right away!
