 Pasta with tomato sauce, anchovies and basil

 

Serves 2
  • 200 g long pasta (I have a fuzzili)
  • 3 tomatoes, peeled and chopped
  • 4 anchovy fillets in oil
  • 1 onion
  • 3 cloves garlic
  • 1 bunch basil, leaves only
  • 4 tbsp olive oil
  • 50 g Parmesan or Grana Padano cheese, finely grated

Cook time: 20 minutes

1) Cook pasta in plenty of salted water as indicated on the package. Save 50 ml of cooking liquid while draining pasta.
2) Heat the olive oil in a medium sized frying pan, add onions and anchovies and cook for 1 minute over high heat, add garlic and tomatoes and cook everything together, stirring occasionally for 4-5 minutes. Until tomatoes, anchovies and onions make pasty sauce.

3) Add drained pasta to the sauce. Mix well and heat up all together. Add coarsely hand torn basil leaves and half of the grated Parmesan, stir and transfer immediately onto serving plates.

4) Sprinkle with remaining Parmesan cheese and serve.
